This is a healthy, time-saving tip–have tasty protein-packed salads on-hand in the fridge. When the family decends at the end of the day and everyone is “hangry,” this is a delicious and quick help in the summer when you don’t want to cook. My three favorite go-to salads are this curried-chicken salad below, tuna salad, and egg salad. Great on a bed of greens or with crackers.
Easy Curried-Chicken Salad
Ingredients
3 cups medium-dice cooked chicken breasts
1-cup small red or green whole grapes
2 stalks celery, medium dice
2 green onions, small diced
½ cup sliced almonds or walnuts
Dressing
1/4-cup mayo
1/3-cup plain yogurt
1 T fresh lemon juice
2 tsp honey
1 tsp hot curry powder (add more if you want more heat)
Directions
In small bowl whisk together dressing and set aside. Chop chicken, grapes, celery, and onions and mix sll ingredients together in large bowl. Pour dressing over and mix. If too dry, add yogurt until you like the consistency. Put in fridge until used. Better if made a day ahead. Serve over greens or with crackers.
