This is a really yummy, healthy bran muffin recipe that has protein in it with the addition of chunky peanut butter. If you are on the run in the morning, it’s a quick fix that should stick to your ribs all morning.
Peanut Butter and Maple Syrup Oat Bran Muffins
2 cups Cracklin’ Oat Bran
1 cup buttermilk
¼ cup olive oil
1 egg
1/3 cup brown sugar
½ cup pure maple syrup
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon pumpkin pie spice
2 heaping tablespoons chunky peanut butter
1 cup granola mix (I used one with sunflower and pumpkin seeds, dried fruit of cranberries, mango, pineapple, and raisins, chopped nuts, and small dried oat chunks)
Directions: Soak Cracklin’ Oat Bran in 1 cup buttermilk and set aside for 10 minutes. Meanwhile in a separate bowl, add all dry ingredients including brown sugar and sift thoroughly with a whisk. Now add granola mix, oil, vanilla, maple syrup, peanut butter, and egg to buttermilk and bran mix and combine thoroughly with a fork. Add dry ingredients as well now and stir until mixed. Drop into a greased muffin tin or with cupcake holders. Fill each cup 2/3 full. Bake on 375 for 15 to 20 minutes or until toothpick inserted comes out clean. Makes a dozen.
